TOASTS WITH MACKEREL AND AVOCADO

INGREDIENTS FOR 4 PEOPLE:
  • TWO RIPE AVOCADOS
  • TWO TINS OF MACKEREL FILLETS IN VEGETABLE OIL WITH LEMON (125G)
  • FOUR SLICES OF WHOLEMEAL OR RYE BREAD
  • ONE LIME
  • SALT
  • PEPPER
  • A FEW SPRIGS OF FRESH CORIANDER

  • Toast the bread slices until golden and crispy. Meanwhile, halve the avocados, remove the pit, and mash the flesh in a bowl with a fork.
  • Add lime juice, salt, pepper, and paprika to the mashed avocado, and mix well.
  • Generously spread the avocado mixture over each slice of toast. Drain the mackerel and roughly flake it over the toasts.
  • Garnish with a few fresh coriander leaves.
