MACKEREL WITH ROASTED SQUASH, THYME, FENNEL, ONION, AND LEMON

INGREDIENTS FOR 2 PEOPLE:
  • ONE TIN OF MACKEREL IN VEGETABLE OIL (125G)
  • ONE SQUASH
  • ONE LEMON
  • ONE FENNEL BULB
  • OLIVE OIL,SMOKED PAPRIKA,
  • CURRY POWDER, THYME, SALT AND PEPPER

  • Cut and deseed the squash, then place it in a baking dish. Drizzle with olive oil, sprinkle with smoked paprika, thyme, curry powder, salt, and pepper.
  • Roast at 200°C for 30–35 minutes.
  • In a bowl, grate the raw fennel, add the lemon zest and juice, a drizzle of olive oil, and some thyme.
  • Arrange the roasted squash, fennel, and mackerel in vegetable oil on a plate.
  • Finish with the fennel juice, a drizzle of olive oil, a touch of smoked paprika, and a pinch of salt.
