MACKEREL WITH ROASTED SQUASH, THYME, FENNEL, ONION, AND LEMON

ONE TIN OF MACKEREL IN VEGETABLE OIL (125G)
ONE SQUASH
ONE LEMON
ONE FENNEL BULB
OLIVE OIL,SMOKED PAPRIKA,
CURRY POWDER, THYME, SALT AND PEPPER

Cut and deseed the squash, then place it in a baking dish. Drizzle with olive oil, sprinkle with smoked paprika, thyme, curry powder, salt, and pepper.
Roast at 200°C for 30–35 minutes.
In a bowl, grate the raw fennel, add the lemon zest and juice, a drizzle of olive oil, and some thyme.
Arrange the roasted squash, fennel, and mackerel in vegetable oil on a plate.
Finish with the fennel juice, a drizzle of olive oil, a touch of smoked paprika, and a pinch of salt.
