BATBOUT BREAD WITH MACKEREL CHUNKS IN TOMATO SAUCE
INGREDIENTS FOR 4 PEOPLE :
TWO TINS OF MACKEREL CHUNKS IN TOMATO SAUCE (125G)
TWO SWEET POTATOES
FOUR TABLESPOONS OF OLIVE OIL
SALT
PEPPER
1/2 TEASPOON OF GROUND CUMIN
FIVE SPRIGS OF FRESH CORIANDER
TEN MINT LEAVES

Preheat the oven to 230°C.
Slice the sweet potatoes lengthwise in half and score the cut side with a knife.
Brush the cut sides with two tablespoons of olive oil, season with salt and pepper, and sprinkle with cumin.
Place the sweet potatoes, cut side down, on a baking tray lined with baking paper. Roast for 30 to 35 minutes.
